This reviewed leek pie “earth and sea“, which is eaten hot or cold with a fresh salad, raw vegetables or eaten alone, according to your desires. A complete dish, light and comforting for cold days and colorful for sunny days, easy to adapt. This is one of my favorite recipes that I am happy to share with you. So get cooking!
Ingredients for a pie
- 250g of flour
- 125g of margarine or 60g of margarine and 65g of olive oil
- A pinch of salt
- 1/2 cup of water
- 3 white leeks
- 250g of mushroom from Paris or any white button mushroom
- 250g of white fillet fish (I used cod)
- 250g of smoked breast bacon dices
- 3 eggs
- Some of Comté cheese
- Parsley, capers, salt, pepper

Cooking time : 35 minutes at 200 °C

Hull and cut the mushrooms in eight pieces with the same knife.
Brown breast bacon dices with olive oil in a frying pan over low heat, just blanch them and keep them soft. Our cast iron saucepan is perfect for that!
Add the leeks and mushrooms in the pan without forgetting to pepper and salt. Let it melt for at least 10 minutes.
Crumble the white fillet fish at the last moment, add the parsley and capers and mix everything.
Mix eggs with a whisk in a mixing bowl and pour the vegetable mixture.
Finish the seasoning at your convenience, crush and pour your pepper from the mortar, add salt.
Pour on the pastry and add the Comté cheese.
You just have to put the pie in the oven at 200 ° C for 35 minutes and let yourself be carried away by the smell of cooking.
