Gratin dish - France

It is a grand classic of the French Kitchen which will cook all of your gratins and stews, and grace your table too.
It will also keep the food warm for a long time if left on the table during a leisurely lunch !
The rectangular shape and the flared sides increase the surface area exposed to the heat.
It is easy to store too because it is stackable.

  1. Recipe for Gratin of Pumpkin and Mushrooms
  2. For 4 people: 1 Pumpkin of approx. 3.5 lbs (1.5Kg)
  3. 4 to 5  Tablespoons of Crème Fraiche
  4. 7 ounces ( 200g) coarsely grated Parmesan
  5. Grated Nutmeg, salt and pepper
  6. 40gr dried mushrooms

  8. Cut the pumpkin into slices with a sharp knife ( the Corsican knife for example ), remove the skin, then chop into pieces for cooking in boiling water.
  9. Slice the mushrooms (shiitake or morels...soaked in water for several hours ) and part cook them in a pan.
  10. Drain the pumpkin and mash them into a puree, add the Crème Fraiche, the parmesan and a pinch of nutmeg.
  11. Add the mushrooms, salt and pepper to taste, and transfer to the Gratin dish which has been previously buttered inside.
  12. Cook in an oven for 45 mins and finally grill for 5-10 minutes at the finish of cooking.

  2. The GRATIN DISH is made from a  unique grey  clay  which is a mixture of natural organic materials which are only found in France.
  3. The special enamel used does not contain either lead or cadmium , and this guarantees safe use in all kinds of food preparation and cooking. ( EEC directive 2005/31/CE)
  4. Firing of the  stoneware dish is carried out at a high temperature , 1250 degrees, at which temperature the enamel becomes water tight, stable and impervious to any cooking juices.

  • Hand wash only in the sink
  • Do not put cold water into it when it is hot straight after cooking
