Not very well known, revisited by Mw.T, a kind of skewer which permits to cook poultry vertically, simple cooking method.

 

All you need to do is to place it on the pick and to push it in.
As this is empty, the heat rises, cooking is uniform and the meat becomes soft. The juice runs down the bird to make it crisp.
The dish sinks around the pick and takes in all kinds of vegetables which benefit and caramelize.

Redesigned by Guillaumet Bardet and made in France by a stoneware manufacturer.
Each piece is unique as they are all shaped and enameled by hand.

  1. Little history of material
  2. The chicken cooker is made from a  unique grey  clay  which is a mixture of natural organic materials which are only found in France.
  3. The special enamel used does not contain either lead or cadmium , and this guarantees safe use in all kinds of food preparation and cooking. ( EEC directive 2005/31/CE)
  4. Firing of the  stoneware dish is carried out at a high temperature , 1250 degrees, at which temperature the enamel becomes water tight, stable and impervious to any cooking juices.

Instructions

  • To preserve the quality and long life of your chicken cooker, it is essential to follow these care instructions
  • Hand wash only in the sink
  • Do not put cold water into it when it is hot straight after cooking

  5. Choose a chicken as you like them : either one that runned, ferm, with muscles or a more leasy one, with fat.. Scure the chicken on the chicken cooker. In the dish, add some skinned potatoes , plain garlic, seasonal mushrooms, salt and pepper.
Start cooking in a cold oven for an hour and check regularly.

  7. Moroccan recipe
  8. Stuff the chicken with green olives, lemon confit and scure it on the chicken cooker. In the dish, add fresh onion rings, garlic, parsley, coriander and large sliced skinned courgettes. Sprinkle with a mix of spices : curcuma, cinamon, Ginger, Pepper and salt. 
Start cooking in a cold oven for an hour and check regularly. Add fresh olives 10 mn before end.
